I’ll take the chicken salad

My favorite Kitchen Nightmare was on last night (BBC)… Sebastians.  Their menu “concept” includes 20+ “Flavor combinations”.  These consist of a variety of  marinades, toppings and seasonings.  So here is the process:
FIRST you select your “Flavor combination”
THEN you select: chicken, New York strip, prime rib, shrimp or mushroom.
THEN you decide if you want it on pasta, a pizza or a salad.
THEN, if you want it on pasta as an entree, you can add a salad or soup.
PLUS there is an entire appetizer section and a full dessert menu.
Do you have a headache yet? Are you excited at all or the options before you?  Or at this point, are you just trying to find the chicken salad on the menu and end this nightmare?

This is exactly what we do to our guests at our home show when we hand them a 30 page catalog to figure out what they need.  Page after page of confusing options all of which look similar in packaging and description.  Now she is just looking for an obligatory purchase to do her duty and go home.

How do we fix it?  Consider an “Express Menu”!  Think in terms of your favorite restaurant.  A limited offering of your best sellers to simplify the party process.  Suggestively sell as the menu expert and make recommendations based on their needs and preferences.  There will be time later to impress them with your “20 flavor combinations”.
